Recipe: Breakfast Cookies

To get you ready for the weekend and prepare a treat for next week, I am sharing this delicious Breakfast Cookie recipe as a guest blog post from Dr. Robin’s Corner! Enjoy!

Sometimes, the trickiest part of changing our diet is figuring out EASY recipes that fulfill the new way of eating.  This is certainly tricky at breakfast, when most of us are used to a bowl of cereal, some toast, maybe pancakes, french toast, or waffles…all those foods are FILLED with gluten and sugar!

Enter the breakfast cookie to save the morning!

These take 5 minutes to mix up, and 12 minutes to bake. On a Sunday afternoon, my kitchen is always full of new ingredients I want to add in to the basic recipe.  They taste like banana bread meets a granola bar (if you add that stuff), and are truly filling!

This recipe makes 8-12 cookies (depending on your scoop) and has NO added sugar, NO grain, and NO dairy. The cookies will be soft after baking, and should be stored in the fridge for the week (if they last that long).

Enjoy!

“Paleo” Breakfast Cookies:
2 bananas (ripe, peeled, broken into pieces)
3 Medjool dates (pitted, halved)
1 egg
1/2 cup almond butter
1/2 tsp baking soda
1/2 tsp vanilla
pinch salt

Add-ins: 1/2 cup nut of your choice (walnuts, almonds, and cashews are all wonderful), 1/2 cup raisins (or other dried fruit), 1/4 cup naturally sweetened chocolate chips, 1/2 cup unsweetened shredded coconut.

Directions:
Pre-heat oven to 350, and line a baking sheet with parchment paper.
Place all ingredients into a blender or food processor, and blend up! Add in 2-3 of the “add-in”s and stir well. Plop big spoonfuls onto your baking sheet (I get 8 good cookies from this recipe), and bake for 12-15 minutes.  They will be soft, so use a toothpick in the center to make sure they are cooked.  Allow to cool, and enjoy!

I eat mine slathered with peanut butter (or another nut butter), and I stay full until lunchtime.  Also wonderful as dessert! No one will know they are full of protein, healthy fats, and fiber.

Recipe: Raw Chocolate Pudding

This raw chocolate pudding became my instant favorite the second I tried it! And it is just as quick as making an instant pudding from the box, except much more yummy! It is no secret that I have a sweet tooth since the day I was born, more or less. In the effort to eat healthy, I try to find different ways of still eating something delicious without sacrificing the sweetness! This pudding is a prime example of that!
 

This is the basic recipe for the raw chocolate pudding, which can also be easily made vegan, and you can add spices and garnishes to fit your mood and liking. It is very simple and easy! I even tested it on my boyfriend without telling him what was in it and he was none the wiser! 😉 So make it for the family and I promise the kids will love it just as much!

 
Raw Chocolate Pudding:
1 avocado, ripe and cleaned
1 banana, peeled
3-4 tablespoons of cacoa /cocoa powder
2 tablespoons of Grade B pure maple syrup or another sweetener
1 teaspoon of vanilla extract
Spices to preference (cinnamon, orange zest/juice, cayenne pepper, etc.)
1/2 cup of water (or a nut milk) or more for desired consistency
Fruit and nuts for garnish
 
Blend all ingredients in blender until creamy.Make sure to scrape everything from the sides to incorporate fully. Add more water/milk as needed for desired consistency. Taste for sweetness and flavor and make adjustments accordingly. Chill it in the refrigerator for a couple of hours before serving and garnish with fruit and nuts of choice. It can be eaten at room temperature. If there are any leftovers, keep it in the fridge for a couple of days, but I doubt you will have to! 😉

Recipe: Vanilla Chia Pudding

Chia Seeds are one of the newer super-foods on every healthy person’s lips! And the reason for it is that they are high in protein, fiber (42% of DV in 1 oz) and Omega-3 fatty acids (13% of DV in 1 oz). They can easily be added to smoothies, homemade granola, sprinkled over hot or cold cereal, baked into crackers, and added to salads.

So what better what to consume these wonderful super-seeds than in a simple and easy dessert, and it’s great for children and adults alike!

Vanilla Chia Pudding:
1/2 cup of whole raw chia seeds
2 1/4 cups of coconut cream / coconut milk / almond milk / any other variety of milk you enjoy
1/2 teaspoon of vanilla extract
a pinch of salt
2 tablespoons of honey / Grade B Pure Maple Syrup
Spices for additional flavor (cinnamon / cacao / lemon zest)
Fruit and nuts for garnish

In a small bowl or jar, combine the chia seeds, milk of choice, vanilla, salt, and spices; stir and refrigerate for at least 1 hour. After the first 30 minutes, stir it again to make sure there are no clumps. Once you’re ready to eat, stir in the honey and top with your favorite fruit and nuts.
Although, you can eat it even after an hour, it is even better if you let it sit overnight in the refrigerator.

Recipe: Carrot Cake Smoothie

So today is what we like to call the “Snowpocalypse” in Atlanta, as it has been snowing all day on Tuesday with ice overnight. So while staying cuddled and warm, I’ve tried a new smoothie recipe that I wanted to share with you all. It is loaded with carotenoids, antioxidants (beta-carotene), vitamin A, biotin, omega-3 fats, vitamin B1, and vitamin B6.

Carrot Cake Smoothie:
Almond milk
2 Bananas
4 Carrots, 2 large and 2 small
2 tbsp of Flaxseed meal
2 tbsp of Coconut flakes
Cinnamon
Nutmeg
Ground ginger
Vanilla extract

Put the bananas, peeled carrots, flaxseed, coconut flakes, spices to take, and splash of almond milk, in a blender and combine it all. Continue adding almond milk until the right consistency and fluid content for your taste. Add a little honey or raw coconut sugar if needed. Top with walnuts and extra coconut. 

The end result is definitely filling and very YUMMY!

Recipe: Oven-Roasted Chickpeas

I am always on a search for a healthy snack to have on hand both at home and on the go. So after chatting with Dr. Robin, I decided to try out roasted chickpeas. I looked around the internet for some suggestions and tried it myself.

Garbanzo beans (chickpeas) are also high in nutritional value: manganese, folate, copper, phosphorus, protein, iron, zinc, and dietary fiber for blood fat regulation, digestive support, and control of blood sugar and insulin secretion.

This recipe is so simple and delicious that it’s sort of unbelievable. I encourage you to try it today for a little healthy snacking yumminess!

Ingredients: 

1 can of chickpeas (garbanzo beans)
1 tablespoon of olive oil
1/4 teaspoon of sea salt
any combination of spices

Preheat the over to 400°F and place the rack in the middle. Rinse and drain the chickpeas, place them on a cutting board on top of a paper towel and pat them very dry with another paper towel. Once the chickpeas are very dry, toss them with oil, salt and spices. I used a little bit of cayenne pepper, cumin, coriander, and nutmeg, but you can choose either sweet (cinnamon and little brown sugar) or spicy (curry or a variety of peppers). Place the coated chickpeas on a baking sheet and bake for about 30 minutes. I rotated them a bit after 15 minutes and let them finished roasting. Once done, they should be crunchy on the outside, but still soft on the inside, and yummy all around!

Bright Start with Warm Water & Lemon

Starting your day off with a bang brings awesomeness to it! Morning rituals are a great way to jump start your day and align yourself for the remainder of your daily activities. In the last couple months, I have shifted my morning routine a bit, and have started drinking warm water with fresh lemon juice before I start on anything else. And if you have been following along, you can see that I am a big fan of all things lemon.

So not only is warm water and lemon a great way to nourish your body, but it is also gives you an opportunity to center yourself before the day starts in full force. So let’s see how we can combine the physical, chemical, and emotional benefits to improve your overall health with a simple morning ritual by being:

Vitamin boost: Lemon juice is high in vitamin C and potassium, as well as calcium and copper. These vitamins help boost your immune system to fight colds and potassium stimulates nervous system function.

pH equalizer: Even though, lemon on their own are acidic, once they are ingested and metabolized, they become alkaline. As discussed before, our bodies thrive in an alkaline environment and our health depends on it.

Digestion aid: The combination of warm water and lemon helps stimulate the gastrointestinal tract and peristalsis (that helps move things in the intestines), which promotes regular bowel movements that are important for good health in order to rid the body of toxins. In addition, the warm water with lemon helps flush out the body system by increasing urination and removing toxins through urine.

Deep hydration: Starting your day with a hydration boost helps your body perform all of its appropriate functions. Deep hydration removes toxins from inside through the gut and outside through the skin; helps reduce the stress on the body with healthy and non-fatigued adrenal glands, and even promotes weight loss by fighting off hunger cravings.

So try it for a month, just squeeze a juice from half a lemon and mix it with a cup of warm water (not hot or boiling water!).

10 Household Uses for Lemons

Lemons are one of those household items that serve a multitude of purposes, especially with anything health related, but they go way beyond that. Besides their refreshing smell and zesty flavor, they can be utilized in many different ways beyond their traditional uses.

So here are some suggestions on how to use them in your kitchen and laundry room:

In the Kitchen:

1. Freshen Up the Fridge: Remove the odors from the refrigerator easily by dabbing lemon juice on a cotton ball or sponge and leave it in the fridge for several hours. Also, make sure to check the fridge for anything that may be causing the bad smell and get rid of it.

2. Fruit and Vegetable Wash: To naturally remove the pesticides and dirt that may be on the skin of your fruits and vegetables, slice a lemon and squeeze out one tablespoon of lemon juice into your spray bottle, because lemon serves as a natural disinfectant.

3. Keep Your Produce from Turning Colors: When preparing certain vegetables and fruits, they may start changing colors once they are cut, especially evident with avocados, apples, cauliflower, and other white vegetables. To combat that, sprinkle some fresh lemon juice over your produce once they are cut to preserve their freshness and color. Lemon compliments fruits and vegetables, so you’ll enjoy the extra freshness in your dishes.

4. Refresh Cutting Boards: If you use your cutting boards to chop onions and garlic, and prepare meat and fish, they may pick up a smell. To get rid of the smell and help sanitize the cutting board, cut the lemon in half and rub the cut side all over the board. You can also use undiluted juice straight from the bottle.

5. Keep Insects Out of the Kitchen: Using insecticides and pesticides in your home, especially the kitchen, may not be something you want to do at the possibility of exposure to your family, small children, and even pets. So to address any issue with insects, you can squirt some lemon juice on door thresholds, windowsills, and into any holes or cracks where they may be getting in. You can also place small slices of lemon peel around the outdoor enterence. In addition, you can mix the juice of 4 lemons (along with the rinds) with 1/2 gallon (2 liters) of water and wash your floors with it.

6. Deodorize Your Garbage : Toss leftover lemon and orange peels at the base of your trash can under the bag and repeat every couple of weeks to keep it smelling fresh.

7. Clean Tarnished Brass and Polish Chrome: Make a paste of lemon juice and baking soda, coat any tarnished brass, copper, or stainless steel, and leave it on for 5 minutes. Afterwards, gently scrub if necessary, wash the item in warm water, rinse, and polish dry. You will be able to remove mineral deposits even on metal stainless steel sinks. For chrome faucets, refrigerators and other accents, rub lemon rind over the chrome metal, rinse, and dry with soft cloth. You will see the sparkle and shine!

In the Laundry Room:

8. Boost Laundry Detergent: Pour 1 cup of lemon juice into the washer during the wash cycle for natural bleaching action, stain removal, and discoloration removal on T-shirts and underwear. The clothes will be brighter and smelling fresh.
For your delicates, soak them in a mixture of lemon juice and baking sod for a minimum of 30 minutes before washing to remove stains without the use of harsh chlorine bleach.

9. Rid Clothes of Mildew: For mildew stained clothes, make a paste of lemon juice and salt, rub it on an affected area, and leave them in the sunlight to dry. You can repeat the process until the stain is gone.

10. Replace Your Dry Cleaner: To remove the yellow stains in the armpits, combine equal parts lemon juice and water and gently scrub them on the stained area, which will allow you to avoid harsh chemicals and expensive bills at the dry cleaners.
